1 cup lentils, soaked
3/4 tsp. salt
1/4 tsp. Black pepper
1/4 tsp. dried oregano
1/4 cup fresh lemon juice
2 Tbs. EVOO
1 Tbs. Dijon Mustard
1 Red bell pepper, diced
3 scallions, thinly sliced
3 Tbs. Chopped fresh mint
3 cups Broccoli- Steamed
2 Carrots- Steamed
